Day 3 of the Chinese New Year: Enjoy Super Stir-Fried Chicken

What is the best way to cook them? Snail Farm personally shares its recipe for super stir-fried chicken—on the third day of the Chinese New Year, enjoy stir-fried chicken to your heart’s content!
Ingredients:
One free-range rooster from Snail Farm, sweet peppers (for colour), 100 g of spring onions and ginger, 10 Sichuan peppercorns,
one star anise, a small piece of cassia, two slices of Chinese angelica, light soy sauce, dark soy sauce, a can of beer, salt
Method: The whole process takes about two hours
1. Wash the rooster and chop it into pieces (a fresh chicken does not need blanching); cut the sweet peppers into chunks.
2. Heat a pan with plenty of oil; fry the ginger slices until golden; add the spices and stir-fry until fragrant.
3. Add the spring onion pieces, spread the chicken pieces evenly in the pan, pan-fry until the underside sets, then stir-fry.
4. Stir-fry until the surface is lightly charred and the oil is clear and bright; add a little dark soy sauce for colour.
5. Add the beer and stir-fry, then add boiling water until it covers the chicken pieces.
6. Season with salt and light soy sauce, cover the pan, and simmer over medium heat.
7. When the sauce is almost reduced, add the green and red peppers and stir-fry.
