Day 5 of Chinese New Year: Come try radish sashimi

After a few days of rich fish and meat dishes, why not switch to something light and crisp — some radish! At the Beijing Organic Farmers’ Market, radishes from different farmers each have their own flavour. The soil differs, the growing methods differ, and the flavour that results has its own character too, but they have only one thing in common — they are all delicious. The method is quite simple, so why not try it today!

Ingredients:
White radish or green radish from the farmers at the Beijing Organic Farmers’ Market
Soy sauce (optional)

Method:
1. Wash the radish, and do not peel it
2. Cut it into strips as thick as a finger
3. Pour a little soy sauce into a dish and place it beside the radish

Notes:
The radish skin is not unpleasant, and peeling it actually spoils the flavour.
Do not cut it too thinly; thick cuts are what make it sweet and satisfying.
